The 2020 harvest was the first harvest of Cabernet Franc and Cabernet Sauvignon. The vineyards are located next to the Natural Park of Serra da Arrábida, about 5 km in a straight line from the Atlantic Ocean, with the Arrábida mountain range between the vineyard and the ocean, reducing a little the strong maritime influence, and allowing optimal conditions of maturation.
This wine was produced only with the varieties Cabernet Franc and Cabernet Sauvignon, varieties that adapted very well to the terroir. The vineyards have a productivity of 3.5 tons per hectare. The harvest occurred in mid-September 2020.
The resulting wine has bright and intense ruby color, and features aromas of black fruits and violets such as currants and black cherries. It has a long finish, due to its fine tannins. It can be harmonized with all red meats, as well as roasted pork loin. You can also accompany pasta with tomato sauce, and vegetables such as peppers or stuffed
eggplants, sautéed mushrooms, beans or lentils. It can be consumed as an aperitif or accompany cheeses such as brie, Camembert, or the famous cheese of Azeitão or the cheese of the Serra da Estrela.
Vinification: The control of maturation of the grapes was made to define the desired state of maturation. The manually harvested grape was destemmed and crushed. The fermentation occurred in stainless steel press with automatic treading with controlled temperature at 24ºC for two weeks, then was pressed. After malolactic fermentation, the wine aged in stainless steel for 22 months until it was bottled.
